Raised in Quebec, this whole duck is plump, succulent, and loaded with rich, versatile fat. 

Though perhaps not what it’s known for, Quebec is wonderfully suited to raising ducks. With sandy soils, ample natural water, and a relatively humid climate, descendants of late-nineteenth century Chinese Peking Ducks have always thrived in this area. This natural predisposition is paired with rigorous and thoughtful care for the birds. They are fed a hormone and steroid-free diet of corn, wheat, and soybeans, receiving attention throughout the day while they roam freely in large, open areas. All of these efforts have assured that our Canadaian Pekin Ducks are a mainstay among the finest restaurants in the country, regardless of cuisine.
