The Story

Italian Summer Black Truffles (tuber aestivum) are the milder cousin to Winter Black Truffles (tuber melanosporum). Though they lack the intense, pungent aroma that characterizes pricier Winter Truffles, their comparatively mellow character makes them much more affordable and versatile. They first appear in late Spring, staying in season throughout the summer. Their interior color profile ranges from creamy blonde to light brown, with incredibly intricate veining. 



Summer Black Truffles have a beautiful light hazelnut fragrance and a deep, nutty flavor. Because they are so affordable, there is no need to exercise restraint when shaving these truffles as garnish. A wonderful excuse to really utilize that truffle shaver!



These truffles really shine when warmed. We recommend applying heat when using them, layering under the skin of a chicken before roasting, or tossing into warm pasta with black pepper & our 24-month Parmigiano Reggiano.
